300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, serving 10)

200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Combine every ingredients in a pan, heat until it reaches a light boil, mixing so the sugar melts. Next, turn off the stove and leave to reach room temperature entirely. Transfer into a clean bottle, cap it and refrigerate it in the fridge, where it will keep for about four weeks.
Preparing the Premix: Combine every spirits and syrup in a big jug, leave to sit for one hour, then strain preferably using muslin, so it's perfectly clear.
To serve: Pour 85ml of your cocktail base to a cocktail shaker containing ice, and stir carefully for about 60 seconds to chill. Strain to a chilled martini glass or a similar vessel, decorate with some cranberries and finish by giving it a brief mist with the mandarin essence over the top.
